Two New Gluten-Free Cookies — and a Gluten-Free Recipe to Boot!
We’re excited to introduce two new gluten-free cookies to our online bakery: peanut butter chocolate and chocolate coconut pecan. They’re wonderfully complex and you’ll love them whether you’re gluten-free or not.
Want to make your own gluten-free cookies? These peanut butter cookies are super easy and don’t contain any hard-to-find flours. In fact, you probably have all of the ingredients in your kitchen right now. So get to it!
Quick & Easy Gluten-Free Peanut Butter Cookies
Ingredients1 cup creamy peanut butter1 cup granulated sugar, plus extra for rolling the dough in1 teaspoon baking powder1 eggPreheat the oven to 350°. Using a spatula, beat the peanut butter and sugar together in a medium bowl until well combined. Beat in the baking powder. Add the egg. Mix until it is all well combined. The dough will be sticky. Using clean hands, roll some dough into a ball about the size of a tablespoon. Dunk the ball into a small bowl of granulated sugar and roll around to coat it. Line a baking sheet, covered in parchment paper, with the sugary balls of dough. Bake in the oven for 10-12 minutes. You will know the cookies are done when they hold together but are still a little soft. Take the tray out of the oven and let the cookies rest for at least five minutes. Afterwards, carefully transfer them to a cooling rack. After ten minutes or so, they will have hardened and be glistening with sugar. Makes 1 ½  to 2 dozen cookies.
