Quick and Easy Spring Salad with Strawberries, Caramelized Onions, and Maple Ginger Dressing
Spring is finally here. Not only have I stopped craving root vegetables at every meal, but the strawberries at my local market have gone from $4.00 a basket to $1.49!
I’ve been making versions of this salad all week, so I thought it was time to share. Substitutions can be made at pretty much every step depending on your tastes and the ingredients you have on hand. 
Ingredients (listed per person; scale according to the number of people you’re serving)
2 Tbl olive oil, divided
1/2 red onion, sliced thin
1 handful baby arugula or spinach, washed and dried
1 Tbl ginger maple syrup (this was a great buy at the local farmer’s market. If you can’t find it, add fresh or ground ginger to your favorite maple syrup to taste)
2-3 strawberries, stemmed and roughly chopped (blueberries would also be great)
1-2 Tbl goat cheese, crumbled
salt and pepper (optional)
Directions
Heat 1 Tbl of the olive oil in a skillet over medium-high heat. Add the onions and saute until caramelized, 5-8 minutes. Remove from heat and set aside.
Place the salad greens on a plate. 
In a small bowl, combine the remaining olive oil and ginger maple syrup. Pour over the greens and toss to combine.
Top the greens with the caramelized onions, strawberries, and goat cheese. Sprinkle with salt and pepper if desired.
