Quick and Easy Spring Salad with Strawberries, Caramelized Onions, and Maple Ginger Dressing
Spring is finally here. Not only have I stopped craving root vegetables at every meal, but the strawberries at my local market have gone from $4.00 a basket to $1.49!
I’ve been making versions of this salad all week, so I thought it was time to share. Substitutions can be made at pretty much every step depending on your tastes and the ingredients you have on hand.
Ingredients (listed per person; scale according to the number of people you’re serving)
- 2 Tbl olive oil, divided
- 1/2 red onion, sliced thin
- 1 handful baby arugula or spinach, washed and dried
- 1 Tbl ginger maple syrup (this was a great buy at the local farmer’s market. If you can’t find it, add fresh or ground ginger to your favorite maple syrup to taste)
- 2-3 strawberries, stemmed and roughly chopped (blueberries would also be great)
- 1-2 Tbl goat cheese, crumbled
- salt and pepper (optional)
Directions
- Heat 1 Tbl of the olive oil in a skillet over medium-high heat. Add the onions and saute until caramelized, 5-8 minutes. Remove from heat and set aside.
- Place the salad greens on a plate.
- In a small bowl, combine the remaining olive oil and ginger maple syrup. Pour over the greens and toss to combine.
- Top the greens with the caramelized onions, strawberries, and goat cheese. Sprinkle with salt and pepper if desired.
