Baking with The Boys’ Club of New York
In June I had the pleasure of teaching a cooking class for a group of boys at The Boys’ Club of New York. I got to tour their clubhouse and teach the boys how to make granola bars. They were great, and I definitely learned from them as much as they learned from me. They invented fun combinations of snacks and discovered that when you mix chocolate chips into the granola bar mixture while it’s still warm, you’ll have chocolate granola bars. Read on for the recipe, and let us know what your favorite combinations are!
No-Bake BCNY Granola Bars (adapted from Rachael Ray)
INGREDIENTS:
- 2 cups ready-made granola*
- 1 cup rice cereal, such as Rice Krispies1 cup mix-ins, like dried fruits, nuts, chocolate chips, or pretzel sticks
- 4 tablespoons (1/2 stick) unsalted butter
- 1/2 cup packed light brown sugar
- 1/4 cup honey
DIRECTIONS:
- Put a piece of wax paper or tin foil on top of a cookie tray or shallow pan, allowing some of the wax paper or tin foil to hang over the sides. Set the tray aside.
- Place the granola, Rice Krispies, and mix-ins in a bowl, and stir to combine. Set this bowl aside.
- Place the butter in a medium saucepan. Add the brown sugar and honey.
- Put the saucepan on a burner on the stove, and turn the heat to medium-high. Stir the brown sugar mixture and bring it to a boil, then lower the heat and let the mixture simmer until the sugar dissolves, about 2 minutes.
- Remove the saucepan from the heat and stir a couple more times to make sure it’s smooth.
- Pour the sugar mixture over the granola mixture, and stir to combine, making sure all the ingredients are evenly coated with the sauce.
- Pour the granola mixture on top of your prepared pan and press firmly with the back of a spoon or measuring cup to smooth it out and make sure the pan is filled evenly. It’s okay if the entire sheet is not covered.
- Let the granola mixture set in the refrigerator until firm, about 15 minutes.
- Use the wax paper or tin foil to help you lift the granola mixture off of the tray and onto a cutting board. Cut the bars into small individual pieces (about 2 inches by 3 inches).
- Enjoy!
*Try making your own granola! Preheat the oven to 250F. Stir together 4 cups rolled oats (like Quaker 1-minute oatmeal). Add 1/3 cup brown sugar, 1/3 cup maple syrup, 1/3 cup vegetable oil, and a dash of salt. Stir to combine. Pour onto a baking sheet, spread into an even layer, and bake for 1 hour 15 minutes, stirring occasionally. Remove from the oven and cool.
